If using immediately, pour carefully into your serving vessels or top your favorite elbow or penne pasta. Note: Soak the raw cashews in 4 cups of filtered water for at least 3 hours, up to 12 hours. Store in an airtight container in the fridge for up to 1 week. Remove and add to a container for storage in the refrigerator. Add more water 1 tablespoon at a time until desired consistency is achieved. Blend the ingredients on speed 10 until creamy smooth. Add the cooking liquid along with the seasonings. Drain the veggies and place them in your high powered blender. Boil until fork tender – this may range from 10-15 minutes deepening on the size of the vegetables. Once boiling, add your potatoes and carrots. Add a tablespoon of salt to season the water. In a medium or large sized pot, add water (3/4 of the way filled) and bring that to a boil.
